Marinated Celebration Roast With Roasted Onions

Serves 3
  • 1 (1 lb) Field Roast Celebration Roast, cut into 1/2" slices
  • 1 onion, peeled and sliced into 1" rounds
  • Extra-virgin olive oil
  • Salt and freshly ground black pepper
  • Balsamic vinegar
  • Parsley or rosemary, chopped, for ganish

Cook Celebration Roast according to package.

Toss onion in olive oil. Add a little salt and place on sheet pan.

Roast onion in 350° oven until browned or slightly blackened.

Place cooked & sliced Celebration Roast on a platter, interspersed with roasted onion.

Dress with olive oil and balsamic vinegar. Sprinkle on black pepper and garnish with chopped parsley or rosemary.
