Microwaved Spaghetti Squash

Serves 4-6
INGREDIENTS:
  • 1 spaghetti squash
  • Salt and freshly ground pepper
DIRECTIONS:

Pierce squash in a few places with a fork or paring knife. Microwave on a plate until squash is fork tender, 8-10 minutes. When squash is cool enough to handle, cut in half lengthwise, scoop out seeds, and then use a fork to scrape flesh into long strands.

Add your favorite toppings. Some delicious combinations include:

Parmesan + olive oil + pepper + lemon juice + red pepper flakes

Soy sauce + sesame oil + green onions + sriracha

Black beans + shredded sharp cheddar + salsa
