Mint Truffles

Serves 4
  • 16 oz Solstice chocolate, cut into pieces
  • 1 cup heavy cream
  • 6 mint sprigs
  • 1 tsp vanilla extract
  • Cocoa powder (optional)

In a saucepan, bring heavy cream and mint to a simmer. Remove mint sprigs. Place chocolate in a bowl. Pour cream over chocolate and allow to stand for a few minutes then stir until smooth. Refrigerate for 2 hours. Roll into balls and chill overnight. Roll in cocoa powder if desired.
