Nectarine Clafouti

Serves 10-12
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 2 cups unbleached all-purpose flour
  • 2 cups sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups whole milk
  • 1 1/2-2 cups peeled, halved, pitted, and sliced nectarines
  • 1/4 cup dried currants
  • Vanilla ice cream or sweetened whipped cream

Preheat oven to 350°. Put butter in a 9”x13” baking pan and place in oven until butter has just melted. Remove from oven and set aside.

In a bowl, whisk flour, sugar, baking powder, and salt. Add milk and stir just until flour disappears. Pour batter over melted butter in baking dish. Using a rubber spatula, cut through batter a couple of times to incorporate butter and push batter into corners of pan.

Drain any liquid from nectarines and arrange evenly over batter. Sprinkle currants over batter. Bake until entire top is golden brown, about 40 minutes. Serve warm with vanilla ice cream.
