INGREDIENTS:
- 2 ripe bananas
- 1 cup old fashioned oats
- 1/4 cup chopped dried fruit (preferably unsweetened)
- 1/4 cup chopped nuts
DIRECTIONS:
Preheat oven to 350°. Line a baking sheet with parchment and spray with cooking spray, or use a silicon mat.
In a large bowl, mash bananas. Add oats, fruit, nuts*, and mix all ingredients together until evenly combined. Form into cookie shapes. Bake for 15-20 minutes. Let cool until the cookies stay together when picked up.
Favorite combos: strawberries and peanuts, cherries and pistachios, blueberries and pecans, cranberries and walnuts
* This recipe is very versatile. Add spices or replace the fruit and nuts with 1/4 cup peanut butter and 2 tablespoons cocoa powder for a chocolate peanut butter version!
