Omelet with Spinach and Mozzarella

Serves 2
INGREDIENTS:
  • 1 tsp butter
  • 1 tsp canola oil
  • 3 eggs, beaten
  • Salt and freshly ground pepper
  • 1/8 cup shredded mozzarella cheese
  • 1 cup baby spinach
  • 1/2 large avocado sliced,
  • 1/2 tomato, diced
DIRECTIONS:

In a nonstick pan over medium-high heat, melt butter and add oil. Add eggs and, using a silicone spatula, go around the edge of the eggs, shaking the pan a little to prevent sticking. When the eggs begin to set, lower the heat to low, season with salt and pepper, sprinkle with cheese, spinach, avocado, and 1/4 of tomato.

Cover pan and let cook, 1-2 minutes, until cheese is melted. Top with remaining tomato.
