Pecan Pie Oatmeal Bars

INGREDIENTS:
  • 1 3/4 cups milk
  • 3 large eggs
  • 1/4 cup pure maple syrup
  • 12 pitted dates, chopped
  • 1/4 cup oil
  • 2 Tbsp chia seeds
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 1/2 tsp vanilla extract
  • 3 cups old-fashioned rolled oats
  • 1 cup chopped pecans, divided
DIRECTIONS:

This is a great to dish to make ahead of time for breakfast during the week. If preparing ahead, allow to cool completely and then cut into squares. Eat cold or warm in oven at 350° for 10 minutes.

Preheat oven to 350°. Spray a 9″ × 9″pan with cooking spray.

In a large bowl, whisk together all ingredients except oats and pecans. Stir in oats and 1/2 cup pecans. Pour into prepared baking pan. Sprinkle with remaining 1/2 cup pecans. Bake until the center appears nearly set, about 30 minutes.

Cool for 5 minutes before serving and enjoy with yogurt if desired.
