Polenta Lobster Bites with Bisque Sauce

  • 3 Tbsp butter
  • 1/2 cup diced onion
  • 1/4 cup diced celery
  • 1/4 cup diced carrot
  • 1/2 tsp Old Bay seasoning
  • 2 Tbsp tomato paste
  • 3 Tbsp flour
  • 1/2 cup dry sherry or dry white wine
  • 1 cup cold whole milk
  • 1 cup half and half
  • 1 cup chicken broth
  • Salt and freshly ground white pepper
  • 12 polenta rounds
  • 2 Tbsp canola oil
  • 1 lb lobster, cooked and coarsely chopped
  • 1 Tbsp snipped fresh chives

In a saucepan over medium heat, melt butter. Add onion, celery, carrot, salt and pepper and Old Bay. Stir and let cook until vegetables are translucent and are getting soft, about 5 minutes. Add tomato paste and cook for 3 minutes. Add flour and cook, stirring constantly, 2-3 minutes. While whisking, add cold milk, half and half, and broth, increase heat to high and bring to a boil. Reduce to low and let simmer, about 10 minutes.

Using a blender or immersion blender, process until smooth. Season with salt and pepper. Return to saucepan over low heat.

In a grill pan over medium-high heat, add oil. Add polenta rounds and grill on first side until grill marks appear, about 3 minutes. Turn over and grill second side until grill marks appear, about 3 minutes.

Add lobster to bisque sauce. Place polenta rounds on a serving platter. Divide lobster evenly among polenta rounds. Garnish with chives.
