- Pumpkin Cream
- 1 (8 oz) pkg cream cheese, softened
- 1 cup canned pumpkin puree
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 2 cups heavy cream
- 1 1/2 cups powdered sugar, divided
- 9 Harmons pumpkin chocolate chip cookies, crumbled
In the bowl of a stand mixer fitted with the paddle attachment, add cream cheese and mix until well blended and smooth. Scrape down sides of bowl and add pumpkin puree, pie spice, vanilla, and 1 ¼ cups powdered sugar and mix on low until smooth.
In another bowl, add cream, and using a hand blender, beat until stiff peaks form. Add remaining 1/4 cup powdered sugar and mix until blended.
In a trifle bowl, break up 3 pumpkin chocolate chip cookies and place in bottom of bowl. Add 3 dollops of pumpkin cream and, using and offset spatula, spread evenly. Add more cookie crumbs and then dollop sweetened cream onto cookies. Add more cookie crumbs and add dollops of pumpkin cream and spread evenly. Add more cookie crumbs and dollop sweetened cream onto cookies. Repeat until all ingredients have been used. Garnish with a few cookie crumbs.
