INGREDIENTS:
- 2 pkgs Harmons baby carrots
- 2 Tbsp olive oil
- 2 tsp Harissa seasoning
- Salt and freshly ground pepper
- 1 Tbsp honey
- Fresh lemon juice
- 2 cups arugula
- 2 Tbsp cotija, crumbled
DIRECTIONS:
Preheat oven to 400° and line a rimmed baking sheet with a silicone mat or parchment paper.
In a bowl, toss carrots in olive oil, harissa, salt and pepper. Place on prepared sheet and bake until just tender and beginning to caramelize, about 10 minutes. Drizzle with honey and return to oven and continue to roast until well caramelized, about 5 minutes.
Remove and toss hot carrots in a bowl with a squeeze of lemon juice and arugula. Plate on a serving platter and garnish with cotija crumbles.
