Romesco Sauce

Serves 4
INGREDIENTS:
  • 1 roasted bell pepper, drained from a jar
  • 1 clove garlic
  • 1/2 cup slivered almonds
  • 1/4 cup canned roasted tomatoes
  • 2 Tbsp chopped fresh flat-leaf parsley
  • 1 Tbsp fresh lemon juice
  • 1/4 tsp paprika
  • 1/4 tsp cayenne
  • 1/4 cup olive oil
DIRECTIONS:

In the bowl of a food processor fitted with blade attachment, add all ingredients and blend to desired consistency.

In a saucepan over medium heat, heat until warmed through.
