Sautéed Breakfast Greens

Serves 1
INGREDIENTS:
  • 1 Tbsp vegetable oil
  • 1/2 red onion
  • 1 clove garlic
  • 2 cups spring mix loosely packed
  • Salt and freshly ground pepper, to taste
  • 1 tsp parmesan or feta
  • Pinch of red pepper flakes
DIRECTIONS:

In a nonstick frying pan over medium-high heat, add oil.

Dice red onion, mince garlic, and chop spring mix into thin ribbons. Add onion to pan, and cook until translucent. Add garlic, salt, and pepper.

Stir in greens until slightly wilted. Top with feta or parmesan, and red pepper flakes, if desired. Serve alongside your favorite eggs, toast, and a side of fresh fruit.
