Seared Duck Breast Tacos with Avocado Lime Crema

INGREDIENTS:
  • Seared Duck Breast
  • 1 lb duck breasts, skin on
  • Salt and pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/4 cup cilantro, chopped
  • Avocado Lime Crema
  • 1/2 avocado
  • 1/2 cup Mexican crema
  • 1/4 cup cilantro, chopped
  • 1/2 tsp cumin
  • 1 lime, zest and juice
  • salt
DIRECTIONS:

Duck Breast Tacos

Score the skin of the duck with a sharp knife in a crisscross pattern, about 1/8 in deep. Season the duck breast with salt, pepper, and the spices. Place the duck skin side down in a cold pan. Place the pan over medium high heat and cook for 8 to 10 minutes. The skin should be golden and crispy at the end, if the pan gets too hot and the duck looks to be burning, turn the heat down. Flip the duck and cook until your desired doneness. Duck can be eaten at 135˚ and above. Let the breast rest for 5 minutes before slicing.

After the duck has rested, Slice thin slices against the grain. Lay a few slices in a tortilla, top with cilantro, and any other favorite toppings, and enjoy.

Avocado Lime Crema

Mash the avocado in a medium bowl until smooth. Stir in the crema, cilantro, cumin, lime zest and juice. Season to taste with salt.
