INGREDIENTS:
- 3 Tbsp soy sauce
- 1/2 cup sesame-ginger dressing, such as Litehouse, divided
- 1 (1-lb.) Harmons pork tenderloin
- 1 pt prepared deli broccoli salad
- 2 large carrots, grated
- 1 green apple, chopped
- 1/4 cup chopped salted almonds
- 1/2 cup chopped fresh cilantro
DIRECTIONS:
Preheat oven to 450°. Line a rimmed baking sheet with aluminum foil and lightly grease.
In a large, shallow dish, whisk together soy sauce and 1/4 cup dressing. Add pork to the marinade and turn to coat. Reserve the remaining pork tenderloin for another use. Cover and chill in the refrigerator for 10 min., turning once.
Meanwhile, combine broccoli salad with the carrots, apple, almonds, and cilantro. Add remaining 1/4 cup dressing and toss to combine. Cover and chill.
Remove pork from marinade, discarding marinade. Place on the prepared baking sheet and bake until internal temperature reaches 140 degrees, 20-25 min. Remove from oven, and let stand 5 minutes before slicing. Serve sliced pork atop the broccoli salad.
