Shaking Beef

Serves 4
INGREDIENTS:
  • 2 lb filet mignon, cut into 1" cubes
  • 10 cloves garlic, minced
  • 3 Tbsp firmly packed brown sugar
  • 5 Tbsp soy sauce, divided
  • 2 Tbsp oyster sauce
  • 1 Tbsp fish sauce
  • Freshly ground black pepper
  • 1 Tbsp granulated sugar
  • 2 Tbsp white vinegar
  • 2 Tbsp water
  • 1 red onion, sliced into rings
  • 4 cups arugula
  • 3 tomatoes, stemmed, cored, and sliced
  • 2 Tbsp vegetable oil
  • Steamed brown rice, for serving
DIRECTIONS:

In a large bowl, combine beef, garlic, brown sugar, 3 tablespoons soy sauce, oyster sauce, fish sauce, and black pepper. Let marinate at room temperature for 30 minutes.

In small bowl, combine granulated sugar, remaining 2 tablespoons soy sauce, white vinegar, and water. Add red onion slices and coat in dressing thoroughly. Set aside to soak.

On a serving platter, arrange arugula and tomato slices.

In a large wok or frying pan over high heat, add oil. When oil shimmers, swirl oil around in pan. Add half of beef cubes and sear on all sides, shaking pan, until meat is slightly charred and medium rare, 3-5 minutes. Transfer meat to a plate and repeat with remaining beef. Return first batch of beef to pan to rewarm. Arrange beef on bed of arugula and tomatoes. Top with red onions and serve with rice.
