- 1 1/2 cups all-purpose flour
- 1 cup firmly packed brown sugar
- 2 Tbsp unsalted butter, cold
- 1/2 cup creamy natural peanut butter,
- 1/4 tsp salt
- 2/3 cup molasses
- 1/2 tsp baking soda
- 2/3 cup boiling water
Line a deep pie plate with pie crust. Place in refrigerator to chill.
Preheat oven to 350° and line a rimmed baking sheet with aluminum foil.
To make the topping, in the bowl of a food processor fitted with the blade attachment, add flour, sugar, butter, peanut butter, and salt and process until blended. Chill in refrigerator.
To make the filling, in a bowl, add molasses, soda, and boiling water and whisk to combine. Pour molasses mixture into chilled pie shell. Distribute topping evenly over pie.
Bake until top is lightly browned and edges are set, 30-40 minutes.
