Toss nuts in egg white and water. Scoop out nuts from egg white mixture leaving any excess behind. Toss drained nuts in sugar-spice mixture.  Spread nuts out in a single layer on prepared baking sheet and bake for 20 minutes. Rotate baking sheet, stir nuts, and bake until dry and crisp, for another 20-25 minutes. Cool completely, break nuts apart, and store in an airtight container.
