Spiced Pumpkin Chocolate Torte

Serves 8-10
  • 1 cup (2 sticks) unsalted butter
  • 1 cup plus 1 Tbsp granulated sugar
  • 1 cup plus 2 Tbsp strong coffee
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 1 tsp allspice
  • Pinch of nutmeg
  • Pinch of salt
  • 1 lb semisweet chocolate chips
  • 6 eggs
  • 6 egg yolks
  • 1/4 pumpkin puree
  • Powdered sugar or cocoa

Preheat oven to 325.° Lightly spray a 10” spring-form pan with cooking oil and line with a circle of parchment paper. Spray parchment with cooking oil spray

In a double boiler, add butter, sugar, coffee, and spices and heat until sugar dissolves. In another bowl, add chocolate chips. Pour butter-sugar-coffee mixture over chocolate. Let sit for 30 seconds and stir to combine.

In a large bowl and using a hand mixer, beat eggs and yolks until frothy. Add pumpkin and stir to combine. Add to chocolate mixture and stir well to combine. Pour mixture into prepared pan and bake until edges crack slightly, about 1 hour. Let cool for 1 hour then refrigerate, covered, overnight. Before serving, sprinkle with powdered sugar or cocoa.
