INGREDIENTS:
- 6 oz strawberries, hulled and sliced
- 6 oz blackberries
- 1/2 orange, juiced
- 1 Tbsp chia seeds
DIRECTIONS:
In a small glass bowl, combine blackberries, strawberries and orange juice. Microwave on high for 1 ½ minutes, stirring every 30 seconds. Remove from microwave, mash with fork and let cool, about 5 minutes. Stir in chia seeds and allow it to gel, about 5 minutes.
In a small saucepan over medium heat, combine blackberries, strawberries, and orange juice. Simmer for about 5 minutes, muddling the fruit as it softens. Remove from heat and let cool. Stir in chia seeds and allow it to gel, about 5 minutes.
Serving suggestion: Layer compote over Greek yogurt, pumpkin seeds and granola for a delicious, nutritious parfait.
