Spicy Chicken and Pasta

Serves 4
  • 1/4 cup olive oil
  • 2 Tbsp sesame oil
  • 3 Tbsp soy sauce
  • 1/3 cup rice vinegar
  • 1 tsp fresh lime juice
  • 1 tsp crushed red pepper
  • 1/4 tsp white pepper
  • 1/4 tsp salt
  • 4 cloves garlic, chopped
  • 1 jalapeno, seeded and chopped
  • 4 boneless, skinless, chicken breasts
  • 1 (12 oz) pkg Harmons linguine
  • 2 green onions, sliced, green tops separated from white and pale green parts
  • 2 Tbsp toasted sesame seeds

In a small bowl, combine olive oil, sesame oil, soy sauce, rice vinegar, lime juice, crushed red pepper, white pepper, salt, garlic and jalapeno.

In a large resealable bag, add chicken and marinade. Toss to cover chicken.

In a frying pan over medium heat, add chicken, discarding marinade, and cook until golden brown, about 10 minutes. Turn over and cook until internal temperature reaches 165°, about 10 minutes.

Meanwhile, cook pasta until al dente, according to directions on package.

Toss pasta and pale green parts of green onions in warmed marinade. Serve with chicken. Garnish with green parts of green onions and sesame seeds.
