The Queen’s Ceviche

Serves 4
INGREDIENTS:
  • 2 lb cooked shrimp, tails removed
  • 1 container Salsa Queen Pico
  • 1 cup frozen mango
  • 1/4 cup coconut cream
  • 4 cups grapefruit juice
  • 2 Tbsp sugar or honey
  • 1 cup cup Clamato
  • 1 pkg tostadas
DIRECTIONS:

Marinate shrimp in 3 cups of grapefruit juice for an hour. In a bowl, add Salsa Queen pico, frozen mango, Clamato, shrimp and coconut cream.

Mix all together.

Enjoy on tostadas. Top with your favorite toppings including cilantro.
