Turkey Spinach Burgers

Serves 4
  • 1/2 bunch spinach, thick stems removed, leaves chopped (about 4 cups)
  • 4 green onions, thinly sliced
  • 1 clove garlic, finely chopped
  • 1 lb ground turkey
  • 3/4 tsp ground cumin
  • Salt and freshly ground black pepper
  • 3 Tbsp olive oil
  • 4 Harmons hamburger buns, split, toasted
  • Mayonnaise, thinly sliced red onion, and dill pickle slices

In a bowl, combine spinach, green onions, garlic, turkey, and cumin. Season with salt and pepper. Using a fork, mix gently just to combine. Form turkey mixture into 4 (1/2″-thick) patties.

In a large frying pan over medium-high heat, add oil. Cook patties until golden brown and cooked through and an instant-read thermometer reads 165° turning over once, about 10 minutes per side. Transfer to a plate. Serve turkey-spinach patties on buns with mayonnaise, onion, and pickle slices.
