INGREDIENTS:
- 1/2 hothouse cucumber
- 2 cups 2% plain Greek yogurt
- 1 clove garlic, minced
- 2 Tbsp fresh lemon juice
- Salt and freshly ground pepper
DIRECTIONS:
Grate cucumber into a lint-free clean kitchen towel and squeeze juice out. In a small bowl, mix all together and let sit for about 1/2 hour before using.
