Utah Scones

Serves 25-30
INGREDIENTS:
  • Canola oil, for frying
  • 1 cup powdered milk
  • 2 cups warm water
  • 5-6 cups all-purpose flour
  • 1 1/2 tsp salt
  • 8 tsp baking powder
  • Powdered sugar, optional
  • Honey, optional
DIRECTIONS:

In a large, heavy Dutch oven over medium-high heat, pour 3-4” oil and heat to 375°.

In a bowl, combine powdered milk and warm water.

In the bowl of a stand mixer fitted with the hook attachment, combine flour, salt, and baking powder. With mixer on low, slowly add milk and mix until combined. Cover and set aside.

Divide dough into 2” rounds. Cover dough not in use. Lightly cover a work surface with flour. Using a rolling pin, roll dough into an oval about 1/8” thick. Fry dough until golden brown on both sides then drain on paper towels. Let cool slightly then sprinkle with powdered sugar or serve with honey or honey butter.
