White Chicken Chili

Serves 6
INGREDIENTS:
  • 6 cups low-sodium chicken broth
  • 1 lb shredded rotisserie chicken
  • 2 cans low-sodium white beans
  • 16 oz salsa verde
  • 2 tsp ground cumin
  • Sour cream (optional)
  • Cilantro (optional)
DIRECTIONS:

Combine first 5 ingredients in a large pot. Simmer for 5 to 20 minutes depending on desired thickness.

Serve with optional toppings like  sour cream, cilantro, tortilla chips, or corn bread.
