Whole Wheat PB and J Crepe

Serves 4
INGREDIENTS:
  • 1 cup white whole wheat flour
  • 2 large eggs
  • 1 1/2 cups 2% milk
  • 1 tsp vanilla or almond extract
  • 1 Tbsp sugar
  • 1 tsp kosher salt
  • 1 lb strawberries, sliced
  • 1/2 cup Harmons peanut butter
DIRECTIONS:

In a large bowl, whisk together eggs, flour, milk, vanilla, sugar, and salt until smooth. Let rest at least 5 minutes.

In a lightly oiled frying pan over medium heat, pour about ¼ cup of batter onto pan and swirl around until pan is evenly coated. Cook until bottom of crepe is lightly brown, 1-2 minutes. Flip and continue cooking on other side until completely cooked through, about 1 minute.

Serve with peanut butter and sliced strawberries.
