Wild Rice and Kale Salad

Serves 4
INGREDIENTS:
  • 1 large bunch kale
  • 1 lemon
  • 1 1/2 cups grilled chicken
  • 1 cup wild rice cooked
  • 1 medium honey crisp apple diced
  • 1/4 cup almonds sliced
  • 1/3 cup goat cheese crumbled
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tsp garlic minced
  • 1 Tbsp honey
  • 1/4 tsp cayenne pepper
  • salt and pepper
DIRECTIONS:

Wash kale and chop into bite sized pieces Combine chopped kale and juice of one lemon in a large bowl. Gently massage the kale and lemon juice to soften up the kale.  

Cut grilled chicken into bite size pieces and add to kale along with cooked wild rice, diced apple, sliced almonds, and crumbled goat cheese. Toss and combine  

Now make the dressing by combining balsamic vinegar, olive oil, garlic, honey, cayenne in a separate bowl. Add salt and pepper to taste.  

Drizzle dressing over salad and toss well.
