Charcuterie Boards
The term “charcuterie” dates back to 15th century France and refers to the preparation of cured meats, like prosciutto, salami, etc. But today a charcuterie board can include a variety of cured meats and cheeses, along with a selection of mustards, chutneys, nuts, prepared vegetables, dipping sauces, and spreads. Join Chef Nancy in creating the perfect charcuterie board for the holiday season. Chef Nancy will share her food ideas in helping you select a theme, display your board, and ideas on combining two or three boards to create a Grazing Table.

Risotto a la Milanese with Mascarpone
You may have ordered it in restaurants, but Chef Nancy will show you how to make this creamy Italian dish at home! Despite its appearance, risotto is not a type of rice but is made with a special high-starch, short-grain rice such as Italian Arborio rice. Lucky for us, this special kind of rice absorbs quite a bit of moisture without becoming mushy. This means that flavorful liquids like wine, stocks, etc. can be incorporated into the dish. Come learn how to impress your friends with this traditional stove-top preparation of lovely creamy risotto. The risotto will be accompanied by a delectable Porcini-Crusted Halibut and Autumn-Inspired Salad. This class will feature a wine pairing.
