Giving Thanks: 3-Day Thanksgiving Prep Workshop

Thanksgiving is the time of year where people get the opportunity to give thanks and gratitude to the many blessings and good fortune in their lives. In this class join Chef Jake and Sous Chef Maybel in this multi-day workshop as they show the earth thanks for it’s bountiful harvest by teaching you the in’s and out’s of prepping for your Thanksgiving dinner. We’ll help you create a delicious and memorable holiday meal for your family and friends, plus we’ll do the dishes!

Note: Each guest will make and take home a portion of each menu item for their Thanksgiving table. Light dinner and snacks will be provided during class sessions.

Day 1: November 20th
Cranberry Sauce, Green Bean Casserole, Orange and Pecan Compound Butter

Into the Woods with Bread

Is time for the grown ups to dust their inner child skills and come play with their food! We will review with you how to prepare your goodies, ahead from the busy baking of the Holiday day, and serve them like freshly baked on your Holiday Table!

In this class, we will create whimsical and delicious bread that evoke the spirit of the woods. We will discover the secrets behind crafting a beautiful focaccia bread by hand and transform it into an art piece, we will have fun bringing animal-shaped dinner rolls to live, and we will put together a delightful dessert! Chef Freyka will share the techniques of bread-making; from kneading and shaping to baking. You will eave the class with new baking skills, unique recipes to recreate at home, and a sense of wonder for the magical world of bread-making.

Patisserie: Thanksgiving Centerpieces with Pâte à Choux

This Thanksgiving, explore the art of French patisserie and indulge your guests with a delicious showstopper dessert. We have been teaching eclairs and crème puffs for the last few years and we always talk about all the other desserts that we can make with pâte-à-choux, but this time, Chef Freyka invites you to the school to immerse yourself in the secrets of creating two of the most cherished pastries found in every genuine French patisserie. The basics of éclairs and crème puffs will still be taught as we learn the technique behind pâte à choux, the cornerstone of numerous iconic French delights. From this master recipe, a plethora of traditional treats emerges. In this class we will learn two pastries that are standalone center pieces. Desserts prepared during class can be stored to share at your Thanksgiving Table

DIY Cheese and Grazing Boards

Are you ready to taste, craft and share?

Let’s explore the art of cheese-making as you learn to craft queso fresco and pull mozzarella with Chef Freyka and her team. We will help you turn your entertaining game up a notch by engaging in the art of assembling diverse grazing boards, artfully combining cheeses, charcuterie, fruits, nuts, and more. While we create the grazing boards that each guest will take to their own Thanksgiving gatherings, we will refresh you with mocktails.

It’s PieGiving Day

Are you in charge of pies at your Thanksgiving get-together this year? How about making three whole pies for your celebrations?!!!

Come and make them with us! This our 8th year hosting this class at Traverse Mountain, and we are determined to continue our tradition, which is also our most challenging class! on our last in-person classes we made 104 pies all together in both classes! Chef Freyka to guide you through the preparation of three classic pies from start to finish.

At the end of class, you will not only have learned how to bake perfect pies, but you will be ready for your Thanksgiving celebration the next day!
Remember, each guest takes home three freshly baked pies to share at their Thanksgiving celebration!

Junior Chef 1-Day Summer Camp: French Macarons vs. Macaroons

Discover the delicious world of French macarons and coconut macaroons at our one-day Junior Chef Kids Camp! Perfect for young food enthusiasts aged 10-14, this hands-on culinary experience will teach your child the difference between these delightful treats.

Chef Freyka is an experienced baker and she will share her years of learning with your Junior Chef, from the origins of these delicious cookies to the techniques and various flavor options. She will share her love for creating, mixing, and of course eating macarons! She’ll guide you with ease through all the steps to make these tasty morsels as she helps you master the finicky techniques of “macaronag-ing”! We will also be learning how to make coconut macaroons, emphasizing meringue technique so that you can master many more recipes in the future! Join us to discover the world of Macaroons, and experiment with flavors, shapes, and decorations.

At the end of the camp, your child will bring home their delicious creations, along with a recipe booklet filled with tips and tricks. Don’t miss this opportunity to ignite your child’s passion for baking and expand their culinary skills!

Junior Chef: Baking Series – Fruit Tarts

Summer time is coming, and we’re inviting kids ages 11 and up to join us in learning how to make a beautiful and delicious fruit tart from scratch.

Send your Junior Chef for a fun and educational experience to taste and learn how to make this refreshing and gorgeous fruit tart.  They will also get to work with peers in a safe and helpful environment, learning new skills and techniques to use in the kitchen. Chef Daniela will be preparing light meals for her students to enjoy in the class as well! Spooky is around the corner!!! Trick or Treat… Trick or Treat… is the chanting that we will hear! We are here to help you create that special bite for those special trick-or-treaters knocking on your door! Today we are dressing up our French Macarons to rise to the occasion! We know macarons can be a little intimidating to make, but they will be an easy task after our workshop. Join Chef Freyka as she shares her love for creating, mixing and, of course, eating macarons!
